A Malaysian street food classic!
Best cooked over a charcoal BBQ, but still delicious in the oven (and safer with the British weather!)
4 boneless chicken thighs or 1 x 400g block of firm tofu for veggie
0.5 jar Satay Marinade
0.5 jar Peanut Sauce
Slice chicken thighs lengthways into thin strips (around 5-6 strips per thigh). If using tofu, slice into cubes of 1 x 2cm.
In a bowl add the chicken or tofu and coat with the satay marinade. Cover and marinate in the fridge for at least 4 hours, or overnight if you can!
Prepare the Nasi Impit - rinse the rice and add into a small pan with the water, salt and lemongrass, bring to boil on the hob over a medium heat. As soon as the water boils, turn the hob to the lowest heat and cover the pan with a lid, leave for 15 minutes. Take the rice off the hob and mash with a masher or fork, to get a thick, sticky consistency. Press into a small lined square cake tin, smoothing the top out as much as possible. Cover with cling film and refrigerate whilst your satay is marinating.
Once your satay has marinated, preheat oven to 190c and then skewer your chicken/tofu. With the chicken, skewer in a folded zig zag shape. Place satay onto a lined baking tray, drizzle with a little vegetable oil and cook for 20 minutes, flipping half way.
OR cook on medium-high heat BBQ until chicken is cooked through!
Whilst the satay is cooking, warm the peanut sauce and water gently on the hob until hot through, don’t boil.
Prepare salad - cut cucumber into 4 lengthways, remove the middle and discard (or eat!). Dice the cucumber and red onion into 1cm squares and mix together.
Take the Nasi Impit out of the tray and cut into diamonds
MAKAN! Plate up your satay skewers with the nasi impit and salad then either have your peanut sauce as a dip or pour over!
