Satay Inspired Tray Bake with Chicken and Potato *no peanuts!
Traditional satay from Malaysia refers to a marinated skewered meat that is cooked over a charcoal BBQ. The satay is then served with a peanut dipping sauce. It’s the satay marinade that gives the meat its wonderfully aromatic flavour from herbs and spices like lemongrass, cumin, fennel and coriander seed. Makan Malaysia’s Satay Marinade also has coconut sugar for some sweetness and caramelisation when cooking!
This tray bake is a spin on this traditional dish, bringing those wonderful flavours to your kitchen for an easy midweek dinner – or try it with a whole spatchcock chicken for an alternative roast!
4 x whole chicken leg pieces
1 jar Satay Marinade
500g baby potatoes, halved
1 medium red onion, quartered
1 tsp salt
Marinate chicken legs in Satay marinade for at least 4 hours or leave overnight in the fridge.
Once marinated, preheat the oven to 180°c.
Toss the potatoes and onions in salt and lay out into a deep roasting tray, place the chicken on top.
Cover the tray with foil and cook for 30 minutes.
After 30 minutes, remove the foil, stir the potatoes and onions and cook uncovered for a further 20 minutes to crisp everything up.
Serve with freshly steamed rice.
