The key to a good fried noodle dish is a very hot wok and making sure all your ingredients are prepared so you can cook them quickly, keeping that delicious crunch!

 

Adjust the quantities of The Sambal according to your heat levels and swap the noodles to rice noodles and egg for tofu to make it vegan!

Ingredients

  • 200g fresh egg noodles

  • 1 small carrot, thinly sliced

  • 1/4 small white cabbage, sliced

  • 100 g baby corn, sliced

  • 2 eggs

  • 2 tbsp vegetable oil

  • 1 tbsp Ginger & Garlic Paste

  • 1.5 tbsp Smokey Soya Sauce

  • 1 tsp Sambal

  • Optional garnish:, generous squeeze of lime and crispy onions

Directions

  1. Prepare your vegetables, make sure everything is thinly sliced so it cooks quickly!

  2. Heat the oil in a large wok or large frying pan.

  3. Add in the carrots, cabbage and baby corn and fry over a high heat for 1 minute, constantly stirring.

  4. Push the veg to the side of the pan and crack the eggs in the middle, scramble the eggs until mostly cooked through (about 1 min).

  5. Add in the noodles and Ginger & Garlic Sauce and mix everything together in the pan.

  6. Add in the Wok Sauce and The Sambal and mix.

  7. Take off the heat and serve!
