Sambalicious Curry

Using: THE SAMBAL

INGREDIENTS:

2 tbsp The Sambal

1 400ml tin coconut milk

1 tsp minced ginger

1 tsp minced garlic

Half a red pepper, chopped

1 handful fine beans, halved

2 tbsp sunflower oil

300g Tofu or other protein

1 lime wedge or juice

handful of coriander

METHOD:

Fry ginger, garlic and your choice of protein in the sunflower oil for 2 minutes.

Add sambal, coconut milk & veg and simmer for 10 minutes over medium heat.

Add a squueze of lime and garnish with coriander
