A great, fragrant starter or side dish – try cooking on the BBQ for some extra smokey flavour!
INGREDIENTS
- 400g chicken or tofu, diced into inch cubes
- 2 shallots
- 2 lemon grass stalks
- 1 tsp fennel seeds
- 1 tsp turmeric powder
- 1 tbsp ginger & garlic paste
- pinch of salt
- 0.5 tsp sugar
- Pandan leaves
- 500ml Sunflower oil
METHOD
- Blend shallots, lemongrass, fennel, turmeric, ginger & garlic paste, salt & sugar – add oil if it’s a bit sticky.
- Marinate chicken in this paste for at least 30 mins.
- Wrap & knot each chicken piece in a pandan leaf so they’re secure – check YouTube for tactics!
- Fry in deep frying pan with the oil until chicken is cooked through.
- Or bake in oven for 25 mins.
