Pandan Chicken

GF

A great, fragrant starter or side dish – try cooking on the BBQ for some extra smokey flavour!

INGREDIENTS:

serves 4

400g chicken or tofu, diced into inch cubes

2 shallots

2 lemon grass stalks

1 tsp fennel seeds

1 tsp turmeric powder

1 tsp garlic powder

pinch of salt

0.5 tsp sugar

Pandan leaves

500ml Sunflower oil

METHOD:

Blend shallots, lemongrass , fennel , turmeric, garlic, salt & sugar – add oil if it’s a bit sticky.

Marinate chicken in this paste for at least 30 mins.

Wrap & knot each chicken piece in a pandan leaf so they’re secure – check youtube for tactics!

Fry in deep frying pan with the oil until chicken is cooked through.

Or bake in oven for 25 mins
